Chef Iñaki López de Viñaspre calls himself an anthropologist specialising in food, and his Shoreditch establishment serves up cultural adventure along with culinary creativity.
The speciality of the house is Txuleton, meat from oxen who’ve enjoyed unusually long lives in rich pasture. This exceptional meat is treated simply; roasted on the restaurant’s special charcoal grill, then dressed with sea salt.
It’s brought to the table beautifully sliced and arranged. The result is unusually delicious, with an astonishing depth of flavour and a glorious melting texture.
Don’t miss the txuleton, but do arrive early, so you can enjoy Basque cider and a range of ultra-fresh seafood starters.
